Wedding cakes can be more than just a late night dessert. They can be the centerpiece to your dessert table, added décor to your wedding reception and a display of your personalities. But if you’re not someone who dabbles in edible art, how do you make sure that your cake maker will pull all of this together?

Well, in our experience, the best cakes not only look pretty on the outside, but they taste delicious on the inside. At the end of the day, you should just trust your caterer to know what to do. And though we’re just now getting deeper into wedding catering, cakes are something we’ve been creating for special occasions for as long as we can remember.

The best advice we could give to ensure that the cake matches your wedding theme is to coordinate it with the time of year. This means bringing in seasonal colours and flowers. But for something totally unique, we really love creating cakes that are theme based – either to match your whole wedding theme or to represent the two of you as a couple. For instance, we once made a cake for a couple where one of the two was a football player and the other was a soccer player. To incorporate this into the cake, the cake topper was each of the halves in their team jersey and their sport’s ball of choice.

But a pretty or unique looking cake is irrelevant if the insides aren’t good, too. What’s inside the cake counts just as much! Naturally, you’ll want to go with cake, filling and icing flavours that are your favourites but will also be crowd-pleasers. Chocolate is always a safe bet, whereas outdated fruitcake is no longer very popular.

If you’re not sure what flavours will taste good together, be sure to ask your caterer. One of our favourite flavour combos that we made for a wedding cake was a lemon and vanilla cake filled with whipped cream, fresh berries and raspberry puree. And we heard we weren’t the only ones who favoured these flavours.
