We’re sorry to have to be the ones to say this, but it’s almost time for back-to-school, and with that, comes getting back into the routine of making lunches for the kids. We know, we know – sometimes it’s easier to throw in pre-packaged granola bars and other snacks from the grocery store. But, it’s also more expensive and creates more litter. Many schools have already adopted green initiatives and don’t allow litter in lunches; and if your child’s school isn’t there yet, it’s only a matter of time. So start now to get into the habit of packing litter-less lunches. Lunches don’t have to be pre-packaged to be fun!

I often pack smoothies for my kids’ lunches – they’re quite simple to make (you just throw some fruit and liquid into the blender, essentially), they’re nutritious and can easily be packed in reusable drink containers.

Many of the items you purchase pre-packaged at the grocery store, you can actually make yourself – cookies, fruit leather, applesauce and pudding snacks, even granola bars. And making them can be a fun and educational activity for you to do with your kids. It will allow them to be involved with making their own lunches, learning how to cook and bake, and shows them exactly what’s going into the food they’re eating.

On Sunday evening after dinner and before the kids head off to bed, try getting their help with these granola bars. Then pack them in reusable containers for their lunches.

Homemade Granola Bars

2 cups rolled oats
2 cups rice cereal
13 cup wheat germ
14 cup sunflower seeds
1 cup chopped apricots
1 cup dried cranberries
34 cup corn syrup
13 cup sugar
2 tsp. vanilla
1/2 tsp. cinnamon

-Heat oven oven at 350 F
-Spread oats, crispy rice, wheat germ and sunflower seeds on cookie sheet. Toast in oven for about 20 minutes.
-In a pot, heat to a boil: corn syrup and sugar. Remove from heat and stir in vanilla and cinnamon.
-Place oat mix and cranberry mix in bowl. Pour the syrup over the cereal mix.
-Line 9 x 13 pan with parchment paper. Place mix in the pan, rub your palms with vegetable oil and press into pan and allow to cool.
-Cut into bars. Enjoy!
