The day of love is just a couple of weeks away and it’s never too early to start planning your evening. Of course, our advice is to celebrate the day by sharing food together, and we love the idea of enjoying tapas or a platter of appetizers instead of a full, three course meal. And we’d always recommend making something together – not only will it be less expensive than heading to a fancy restaurant, but it also allows the two of you to do something together while eating a nice meal.
But if time doesn’t allow for this, then Never Enough Thyme can always be your back-up plan. We’ll be offering take-home meals for two and four again this year. You just have to call the Food Shoppe to reserve.
If you do go the make-your-own appetizer route, this one was a favourite at Christmas this year and we’d highly recommend it – your partner is sure to be impressed!
Goat cheese and antipasto in phyllo
2 sheets of phyllo pastry
Clarified butter
Goat cheese
1 jar of antipasto
Brush phyllo with clarified butter; add another sheet. Line ramekin with phyllo and partially bake it according to the package instructions. Place goat cheese inside and bake for another 5 minutes. Top with antipasto and serve with crusty bread.
