Baking in the summertime isn’t always realistic because it means firing up the oven when the weather outside is just as hot as the oven itself, making the house even hotter. So, if you took a break from baking this summer, then fall is the perfect time to get back to it – and now, the warm oven will likely be a welcome added heat to the home as the weather begins to cool. Not to mention, the aroma of fresh baking and fall spices wafting throughout the house will definitely put you in the right mood for the season.
Apples are always a great fruit to use in baking, and Ontario apples are perfectly in season right now so it’s an even better time to make an apple based treat. Like one of our favourites – caramel apple spice cake.
Caramel apple spice cake
2 red prince or granny smith apples, peeled and cut into 8
¼ cup caramel sauce
Batter: cream together…
6 tbsp butter
1 cup sugar
2 eggs, beat in 1 at a time
Then add…
11/4 cups flour
11/2 tsp cinnamon
1 tsp ginger
1/4 tsp ground clove
1/2 tsp salt
1/2 tsp baking soda
1 tsp baking powder
1/4 cup caramel sauce
Finish with…
1/2 cup sour cream
Method: Prepare an 8” spring form pan by buttering the sides and place circles of parchment paper on the bottom. Arrange apples around the pan in a circle and drizzle with caramel sauce, then top with batter. Bake in 350°F preheated oven until wooden skewer comes out clean, about 45 minutes. Let cool for about 10 minutes and flip out of pan onto plate to serve.
