Even though Wiarton Willie predicted an early, the winter weather still has a couple more weeks to stay and with Family Day coming up, we have the perfect solution to stay warm and stay together: making soup.
Soup is one of our favourite things to make and enjoy on cold days, and we especially love that our local area still offers produce options throughout the winter months that work well in a hearty and healthy hot bowl of soup.
We also happen to think that cooking together as a family is a great way to spend time together as well as teach your children how to cook using fresh, local ingredients, and with a day dedicated especially for families coming up next Monday, here’s a recipe for a local mushroom soup that we think all will enjoy.
Before you begin, here’s a tip from our kitchen to yours: make sure the pan is heated well before you add the mushrooms. I also suggest using brown mushrooms as they offer great colour and flavour. White mushrooms can be used, but I find they don’t offer as much boldness.
Forest Mushroom Soup
Ingredients
7 tbsp. butter
2 cups onions, finely chopped
2 packages cremini mushrooms, stemmed, caps chopped
1 tbsp. fresh thyme, chopped
2 tbsp. brandy
3 tbsp. all-purpose flour
6 cups chicken broth
½ cup whipping (35%) cream
Instructions
- Melt butter in large pot over medium-high heat.
- Add onions; sauté until golden, about 5 minutes.
- Add mushrooms and thyme; sauté until mushrooms begin to brown, about 8 minutes.
- Add brandy; stir 30 seconds, then mix in flour.
- Slowly stir in broth and bring soup to a boil; reduce heat and simmer uncovered for 10 minutes.
- Add ½ cup of 35% cream, reduce for another 10 minutes.
- Season with salt and pepper. Ladle into bowls. Enjoy!
