PastaAs you know from previous blog posts of ours, we’re big fans of the tomatoes (and much of the produce) at Floralane Flowers and Produce in Elmira. Now that June is near, tomatoes are getting to be in season and Floralane happens to be known for their tomatoes.

Last week, I talked about meal planning with simple recipes of 5 ingredients and this tomato pasta dish is one of them. It’s perfect for its healthy balance and use of local ingredients.

Fresh Tomato Pasta

Ingredients:

  • 2 pints Floralane grape tomatoes
  • 1/2 red onion
  • 3 tbsp. olive oil
  • Salt and pepper
  • Fettuccine
  • 10 basil leaves
  • 1/2 pkg of Boursin cheese or goat’s cheese

Instructions:

  • Cut grape tomatoes in half and spread on baking sheet.
  • Cut red onions into strips, spread on cookie sheet and drizzle with olive oil.
  • Roast in oven at 400˚F for about 15 minutes.
  • Place in a bowl and crush slightly with a fork.
  • Cook pasta in a pot of boiling water as per the instructions on the package.
  • Place drained pasta in a bowl with tomato mix and toss.
  • Top with crumbled cheese and torn basil.
  • Drizzle with more olive oil and serve.
