May13_campfireEven though it’s still another month until the official start of summer when Victoria Day hits, for Ontarians, the first long weekend since Family Day seems to always be the kick-off to the warm season. We get out the patio furniture, open the trailer or cottage, have a barbecue, and for many people, go camping – or at least have a campfire if we’re not into roughin’ it. Weather permitting, of course.

One of the best parts of having a campfire is the food you can share around it – spider dogs, toasted marshmallows and of course the classic, s’mores. But cooking up treats on the campfire doesn’t have to be same old, same old, you can make it gourmet and really impress the kids this Victoria Day.

If you’ve ever gone on a camping trip with Girl Guides, then you know making treats on the campfire practically gets you a badge of merit. We used to make an amplified version of s’mores with the Girl Guides that took the basic elements of s’mores and added banana to the mix.

Start by letting your campfire get down to the coals – the ones that are hot and perfect for getting the marshmallow that nice, toasty brown. Then, take a piece of tinfoil, place a banana in the middle and slice the banana down the middle. Then stuff it with marshmallows (the mini kind you use in hot chocolate, or larger ones chopped up) and chocolate chips.

Wrap the foil around this concoction and stick it in the coals for a couple of minutes to get warm and melted. Then when it’s finished, open the foil (being careful not to burn yourself) and add crumbled up graham crackers on top. Eat carefully with a spoon – but it’s okay if you get some on you, that’s part of the fun of campfire cooking!

This tasty treat can definitely be modified to your tastes, too. You could use peanut butter chips instead of chocolate, crushed up cinnamon toast crunch cereal instead of graham crackers, slather Nutella inside the banana before adding the marshmallows, or even make your own marshmallow to truly make it gourmet!

If you’re not having a campfire this Victoria Day, these treats would be just as good on a barbecue or even in the oven if Mother Nature doesn’t cooperate. Enjoy!
