saladNow that school has been back in for a month, you’re probably in the swing of things, which means your schedule is also likely busy with after school activities, friend gatherings and whatever else comes up in the meantime. While this time of year can be exciting with new adventures on the horizon, it can also mean a hectic schedule and busy meal times that can sometimes seem daunting when other demands are beckoning.

When meal times are quick, sometimes you need something easy that’s still healthy. Keeping the meal seasonal could be challenging since there are always lots of ingredients to choose from. Use what speaks to you! These recipes for salad and stuffed chicken have all of my favourite produce. I recommend preparing the vegetables and chicken the night before to make dinner preparation easier.

Roasted Fruit and Spinach Salad

Ingredients

1 sweet potato, cut into matchsticks
1/2 thumb of ginger, chopped
2 tbsp. maple syrup
2 ginger crisp apples, cut into 8 wedges
1/4 red onion, sliced
1/4 cup pecans
5 sprigs of thyme, leaves removed
1 tbsp. olive oil
1/2 tbsp. balsamic vinegar
sea salt
cracked pepper
local spinach

Instructions

Place all ingredients in a pan and drizzle with olive oil and balsamic vinegar; season with salt and pepper.
Roast in oven for 20 minutes at 400˚F.
Allow the roasted fruit to cool slightly and toss with washed spinach.

Goat Cheese and Basil-Stuffed Chicken Breast

Ingredients

4 chicken breasts
Goat’s cheese, broken into large pieces
8 leaves fresh basil
Olive oil
Salt and pepper

Instructions

Stuff turkey breasts under the skin with 2 pieces of goat’s cheese and 2 leaves of basil.
Place on baking sheet, drizzle with olive oil, season with salt and pepper.
Finish in the oven at 400˚F for approximately 18 minutes.
