While apples are in season almost year-round in Ontario, they are in their prime right now. One medium apple contains about 80 calories and is a good source of fibre and Vitamin C.
Apples have many applications in cooking, but one of our favourite uses is baking them into different treats since baking really brings out the sweet sugars that occur naturally in apples. Plus, it doesn’t hurt that the aroma of apples baking makes the whole house smell like the flavours of fall.
If you’re looking for something new to bake with apples – different from the usual apple pie or crisp – try this recipe we love for apple brownies. Pairing the tart flavours of apples with the sweet and rich flavour of chocolate brownie is a combination that we think will even convince the brownie purist.
Apple Brownies
Ingredients
3 eggs
1 3/4 cups sugar
1 cup vegetable oil
1 tsp. vanilla
2 cups flour
1 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. salt
2 cups local apples, diced
Instructions
In mixing bowl mix together eggs and sugar until fluffy, add oil and vanilla. Mix well. Sift dry ingredients and mix in the egg mix. Stir in apples. Pour into a greased 9×13 pan X bake in preheated oven at 350 f for approximately 35- 40 minutes.
