We also happen to like using honey as a sugar substitute in baking and cooking, but if you choose to do this, there are a few things to keep in mind to ensure that you don’t mess up the consistency of your dishes.
Substituting honey might not work in all dishes because it adds more acid; so for instance, if you’re canning, the extra acid could completely botch your whole batch.
If a recipe calls for a cup of sugar, reduce that by a quarter cup for the honey substitute. Honey weighs more than sugar so you need less of it. It’s also sweeter than sugar and has a different flavour than sugar, so using less will ensure that you don’t ruin the overall flavour of the recipe.
Also, because honey is a liquid, you should reduce other liquid ingredients by a half of a cup for every one cup of honey you add lest your dish become too soggy or runny.
And finally, if you’re using honey, particularly in baking, reduce the oven temperature by about 25 degrees Fahrenheit so that your baking doesn’t brown too fast.
